A labour of Love
Cutting these hand dived scallops each day is a privilege and although in our main dish we serve just the meat I can assure you every element gets used
The Shells go into flower beds to help with drainage
The frills cleaned and de hydrate to turn into a crumb
The Roes, brined and Smoked for scallops for tarama or a smoked scallops roe butter
The Meats cooked and basted in an Iberico ham and sherry vinegar butter
